Avocado Goodness

As a follow up to Rhaya’s post yesterday about embracing the “fatty” foods, I thought I would give you little more info about one of my favorites, avocados.
So what’s so great about avocados? According to The World’s Healthiest Foods, a non-profit organization whose mission is provide information about the world’s nutrient-rich healthiest foods, avocados have lots to offer including:
oleic acid - a monounsaturated fat that may lower cholesteral
potassium - a mineral that helps regulate blood pressure
folate - for heart health
vitamins K, B6, C
fiber
copper
And there is more “green” about them than just their color; in one year a California avocado tree can absorb as much carbon as a car driven 26,000 miles!
There are lots of ways to incorporate avocados in to your diet, check out a few of our recipes here and here. You could also slice it up on a salad or try the following easy guacamole recipe that my husband came up with.
Easy Guacamole
Slice 2 avocados in half and remove the pits. Scoop out the meat of the fruit into a bowl, add the juice of 1/2 orange and 1 lime. Add 1/2 of a chopped white onion and a chopped tomato, salt and pepper to taste. Mix with a fork, leaving it a little chunky. We love it with Garden of Eatin’ Blue Chips.

i always try to grow my own tree whenever i have a pit around. i can’t imagine having a life with a flourishing tree. it would be so awesome! thanks for all the info.
