Chocolate Ice Cream in a Blender

A quick and easy non-dairy dessert without the need for a fancy ice cream machine.

Chocolate Ice Cream (Adapted from “Raw”Chocolate Ice Cream in The Raw Food Diet Detox by Natalia Rose)

Crush a handful of ice in a blender. Add 1 and 1/2 sliced bananas, 2 Tbsp. cocoa powder (I like Equal Exchange), 1-2 packets of Stevia, 1 Tbs. Tahini*, and 3-4 Medjool dates without the pit. Mix thoroughly and add a couple more handfuls of ice to achieve and ice cream like consistency. Pour into 2 dessert dishes and top with shredded coconut, strawberries or your almonds.

*Tahini is essentially a sesame seed verion of peanut butter. While completely optional in this recipe (I kept forgetting to add it and never knew the difference!), sesame seeds are a great source of calcium, copper and essential fatty acids, and the tahini seems to help everything “stick” together better.
