Delicata

We are in the midst of our first winter storm here in upstate New York, and after spending a few hours out in the snow today I was craving something warm and toasty.  Turns out, there was a great squash dish that I had been wanting to try which calls for delicata squash and maple syrup, two locally available ingredients this time of year, all roasted up with some toasted candied pecans and dried cranberries.  Perfect.

I cut the recipe in half, but otherwise followed it to a tee.  You can find it here, posted on  Food On The Food, a great food blog by a fellow Eat Local Challenge participant.
