Local Leftovers

I wasn’t able to get to the Wednesday market this week, which meant my local meal was not very well planned. The pantry and fridge were both pretty bare, so I cooked the last of the local pasta and added the remaining eggplant, mushrooms (from Homestead Growers) and tomatoes that were still in the fridge.

Topped with some shredded Fleur de la Terre, the meal turned out better than if I had planned it! Proving that you don’t have to be a planner or a chef to enjoy all that local foods have to offer.
