A Waldorf Without


Until I went to the Local Harvest Lunch at Apple Family Farms, I had never had a Waldorf Salad. The reason for this was because one, I usually shy away from fruity salads, and two, I had never been offered one that didn’t have chicken in it. However, one night last week, I was looking at the food I had on hand (which included an abundance of apples and celery) and realized I had most of the ingredients necessary for a traditional Waldorf salad. Following a recipe I found in Self Magazine, I put together my own version of the Waldorf (without chicken).

A Waldorf Without

2 celery stalks, chopped
2 small Granny Smith apples, cut into bite sized chunks (leave the peel on for nutritional benefits)
1/3 cup reduced-fat sour cream
1/4 cup lowfat plain yogurt
1/4 cup golden raisins
1/4 cup chopped walnuts
1/2 tbsp honey
1 tsp fresh lemon juice

Mix the above ingredients, and serve on a bed of lettuce. Serves Two.
